Description
A refreshing and tangy Rhubarb Sorbet made with just four simple ingredients. Perfect for a light and elegant spring dessert.
Ingredients
5 cups rhubarb, chopped into 1/2-inch pieces
3/4 cup water
1 cup granulated sugar
2 teaspoons lemon juice
Instructions
1. Place all the ingredients in a large pot over medium heat. Stir to combine.
2. Bring the mixture to a simmer, cover and cook for about 5 minutes, stirring occasionally, until the rhubarb is soft. Remove from heat and uncover. Let cool for at least 15 minutes.
3. Pour the mixture into a blender or food processor and blend until completely smooth, about 1–2 minutes. Transfer to a container and refrigerate until fully chilled, several hours or overnight.
4. Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions. Store in the freezer until ready to serve.
Notes
For an extra smooth texture, strain the mixture before chilling.
Let the sorbet sit at room temperature for 5–10 minutes before scooping.
Frozen rhubarb works perfectly as a substitute for fresh.
