Description
Santa Fe Chicken Packets are a bold Southwest chicken foil dinner packed with black beans, corn, salsa, and melted cheese. Perfect for 10-minute prep and easy cleanup.
Ingredients
4 boneless skinless chicken breasts
½ tsp chili powder
Salt and pepper, to taste
15 oz black beans, drained and rinsed
2 cups frozen corn, thawed
1 cup diced bell peppers
¾ cup salsa or 10 oz Rotel tomatoes with chilies
½ cup shredded Mexican cheese blend
Optional toppings: cilantro, fresh tomato, jalapeños, sour cream
2–3 cups cooked rice for serving
Instructions
1. Spray 4 large pieces of foil with cooking spray.
2. Place one chicken breast on each foil piece and season with chili powder, salt, and pepper.
3. Top each with black beans, corn, bell peppers, and salsa.
4. Fold and seal each foil packet tightly.
5. Grill over medium heat for 20–25 minutes flipping once, or bake at 375°F for 30 minutes until internal temperature reaches 165°F.
6. Carefully open packets and sprinkle cheese on top.
7. Close foil again for 2–3 minutes to melt cheese.
8. Serve over cooked rice and add desired toppings.
Notes
Seal foil tightly to lock in moisture.
Adjust cooking time for thicker chicken breasts.
Great for grilling or oven baking.
Can be prepped ahead and refrigerated.
