Ingredients
1 lb Italian sausage, browned, drained and chopped
1 15 oz can Italian diced tomatoes, (add a 2nd can if you really love tomatoes!)
4 cups vegetable or chicken broth, 32oz container
8 ounces cream cheese, cubed
1 20oz bag frozen cheese tortellini
3–4 cups fresh spinach
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp Italian seasoning
½ tbsp black pepper
Instructions
1. Add the sausage, broth, diced tomatoes, cubed cream cheese and seasonings to your slow cooker. Stir well, and cook on high for 3-4 hours or low for 6-8 hours.
2. Stir in the spinach and frozen tortellini. Cook for an additional 30 minutes or until pasta is done.
3. Serve immediately! Store leftovers in the refrigerator for up to 3 days.
Notes
Turn off the crockpot once cooked to avoid overcooking the tortellini.
Use refrigerated tortellini for faster cooking—check after 15 minutes.
Add red pepper flakes for spice or substitute other proteins like chicken or turkey.
