Description
A flavorful Cajun-style Shrimp Dirty Rice made with sausage, bell pepper, and bold spices for a wholesome one-pot dinner.
Ingredients
1 lb shrimp, peeled and deveined
1 tablespoon olive oil
1 cup long grain white rice
1/2 lb ground pork sausage
1 green bell pepper, diced
1 celery stalk, diced
1 small onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 teaspoon Cajun seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Salt and pepper to taste
2 tablespoons chopped fresh parsley
Optional: hot sauce for serving
Instructions
1. In a large skillet, heat olive oil over medium heat. Sauté the shrimp until pink and cooked through, about 2-3 minutes per side. Remove and set aside.
2. In the same skillet, cook ground pork sausage until browned, breaking it up with a spoon.
3. Add onion, bell pepper, and celery. Cook for 5 minutes until softened.
4. Stir in garlic, Cajun seasoning, smoked paprika, cayenne, salt, and pepper. Cook for 1 minute.
5. Add rice and toast for 1-2 minutes until lightly golden.
6. Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until rice is cooked.
7. Stir in the cooked shrimp and fresh parsley. Adjust seasoning as needed.
8. Serve hot with optional hot sauce on the side.
Notes
For extra flavor, squeeze lemon over the finished dish or add a splash of Worcestershire sauce before serving.
