Description

Single Jar Fruit Jam is a quick small batch jam made with fresh fruit, sugar, and lemon juice. This easy fruit preserve creates a homemade spread in just 20 minutes.

Ingredients

Scale

2 cups chopped fruit (strawberries, raspberries, or peaches)

3/4 cup granulated sugar

1 tablespoon freshly squeezed lemon juice

Instructions

1. Wash and hull the fruit as needed. Cut large strawberries into quarters and peaches into bite-sized pieces.

2. Combine fruit, sugar, and lemon juice in a medium heavy-bottomed saucepan. Gently mash with a wooden spoon until juicy and sugar dissolves.

3. Cook over medium heat, mashing and stirring frequently. Bring to a rolling boil and cook until thick and darkened, about 20 minutes.

4. Carefully spoon into a clean 8-ounce jar. Cool to room temperature, seal, and refrigerate.

Notes

Store in refrigerator for up to 3 weeks.

Use a clean spoon each time to maintain freshness.

You may freeze with headspace for expansion.
