Description
Tender slow cooker french dip sandwiches with shredded chuck roast, melted mozzarella, and rich au jus.
Ingredients
3–4 pounds chuck roast
1 tablespoon olive oil
1 large onion, sliced
4 garlic cloves, minced
2 cups beef broth
1/2 cup dry red wine (or more broth)
2 tablespoons Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and black pepper
6 hoagie rolls
6 slices mozzarella
Butter for toasting
Optional parsley
Optional horseradish
Optional sautéed mushrooms or peppers
Instructions
1. Heat olive oil in a skillet.
2. Season roast with salt and pepper and sear all sides.
3. Transfer beef to slow cooker.
4. Sauté onion and garlic in same skillet.
5. Deglaze with wine and pour into slow cooker.
6. Add broth, Worcestershire, soy sauce, thyme, rosemary, and bay leaf.
7. Cook on low 8 hours or high 6 hours.
8. Shred beef and return to juices for 20 minutes.
9. Toast buttered rolls at 375°F for 5-7 minutes.
10. Assemble sandwiches with beef and mozzarella.
11. Broil until cheese melts.
12. Serve with strained au jus.
Notes
Replace wine with broth if desired.
Add mushrooms or peppers for more flavor.
