Description

Summer Corn Salad is a vibrant salad made with grilled corn, avocado, fresh vegetables, and a tangy lime dressing. Perfect as a fresh vegetable side for summer meals.

Ingredients

Scale

6–8 ears corn on the cob

2 Tablespoons olive oil

1/4 red onion, diced

1/2 red bell pepper, chopped

1 avocado

1/4 cup olive oil

1/3 cup apple cider vinegar

1 teaspoon sugar

1 teaspoon dijon mustard

Salt and pepper to taste

Juice of 1 small lime

Instructions

1. Whisk olive oil, apple cider vinegar, sugar, dijon mustard, salt, pepper, and lime juice together. Set aside.

2. Add 1-2 inches of water to a large skillet and bring to a boil. Add corn and cook for 3-4 minutes, rotating to cook evenly. Drain.

3. Heat grill to medium-high. Brush corn lightly with olive oil and grill, rotating until golden on all sides.

4. Allow corn to cool, then cut kernels off the cob and add to a bowl.

5. Add diced red onion, chopped red bell pepper, and cubed avocado.

6. Drizzle with dressing and toss gently to combine. Serve immediately.

Notes

Add avocado just before serving to prevent browning.

You can substitute frozen corn by thawing and charring in a skillet.

Adjust salt and lime juice to taste.
