Ingredients

Scale

2 cups old fashioned oats

1/4 cup chopped pecans

1/4 cup brown sugar or maple syrup

1 teaspoon cinnamon

1/8 teaspoon nutmeg

1 1/2 cups milk (or non-dairy milk)

1/2 teaspoon vanilla extract

1 tablespoon melted butter or vegan butter

1 egg (or liquid plant egg)

Cooking spray

2 ripe peaches, thinly sliced

Instructions

1. Preheat the oven to 375 F.

2. In a medium bowl, combine the oats, pecans, sugar or maple syrup, cinnamon and nutmeg.

3. In a second bowl, whisk together the milk, butter, egg, and vanilla extract. Add wet ingredients to dry and stir to combine.

4. Spray an 8×8 baking dish with cooking spray. Pour the oatmeal mixture into the dish.

5. Top evenly with fresh peach slices.

6. Bake 20-25 minutes until edges are bubbly and slightly browned.

7. Serve warm with additional peaches, pecans, brown sugar, or maple syrup if desired.

8. Store leftovers covered in the refrigerator for up to 4 days.

Notes

Use ripe peaches for best flavor.

For vegan version, use plant milk and egg substitute.

Great for meal prep oatmeal; reheat individual portions as needed.
