Description

Sunshine Salad is a creamy easy fruit salad made with fresh pineapple, Mandarin oranges, bananas, and sugar-free vanilla pudding. Perfect healthy summer side.


Ingredients

Scale

1 fresh pineapple, cored and cut into chunks

1 can (15 oz) Mandarin oranges in light syrup

2 bananas, peeled and sliced

1 box (4 serving size) Jell-O sugar-free vanilla instant pudding


Instructions

1. Keep the Mandarin oranges in their syrup; do not drain.

2. Chop the pineapple and bananas into chunks.

3. In a large bowl, combine all the fruit.

4. Evenly sprinkle the dry vanilla pudding mix over the fruit without mixing with milk.

5. Stir the mixture thoroughly.

6. Cover and refrigerate for at least one hour before serving.

Notes

Do not mix pudding with milk.

Use fresh pineapple for best texture.

Serve chilled.

Best enjoyed within 24 hours.
