Sweet Corn Salad with Peaches is a refreshing summer corn salad made with juicy peaches, lime, jalapeño, and avocado.

Scale

4 ears of corn

2 peaches, sliced or diced

¼ cup red onion, finely chopped

3 Tbsp cilantro, chopped

1 medium jalapeño, deseeded & thinly sliced or diced

1–2 large avocados, diced

3 Tbsp lime juice

3 tsp honey

Salt & black pepper, to taste

1. Cook corn and cool completely. Cut kernels off the cob into a large bowl.

2. Whisk lime juice and honey until dissolved. Add black pepper.

3. Add peaches, red onion, cilantro, and jalapeño to corn.

4. Toss with vinaigrette until coated. Season with salt.

5. Chill 10-20 minutes.

6. Top with avocado before serving.

Add avocado right before serving.

Adjust jalapeño for preferred spice level.
