Description
Crispy fried chicken tossed in a sweet and spicy Thai chili sauce — a quick 30-minute meal perfect for weeknights.
Ingredients
12 oz. skinless boneless chicken breast or thigh, cut into small pieces
oil for deep-frying
1 tablespoon oil
2 cloves garlic, minced
4 tablespoons Thai sweet chili sauce
1 teaspoon lime juice
1 pinch salt
1/2 teaspoon white sesame
1/2 tablespoon chopped cilantro leaves
Frying Batter:
1 egg white
1/2 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/2 cup water, ice cold
1 tablespoon cooking oil
1 pinch salt
Instructions
1. Mix all the ingredients for the batter until well combined, then add the chicken.
2. Heat a wok with two inches of oil and deep-fry chicken until golden brown.
3. Transfer chicken to paper towels to drain.
4. Clean wok and add oil, then stir-fry garlic until aromatic.
5. Add fried chicken, sweet chili sauce, lime juice, and salt. Stir well.
6. Garnish with sesame seeds and cilantro. Serve immediately.
Notes
For extra crunch, use ice-cold water in the batter. Adjust sweetness or spice to your preference.
