Hearty Vegan Lentil Sloppy Joes made with brown lentils, veggies, and smoky spices for a healthy, oil-free dinner everyone will love.
Ingredients
For the Lentils:
¾ cup dry small brown lentils, rinsed
1 cup water
2 cups vegetable broth
3 Tbsp tomato sauce
For the Sloppy Joe Filling:
1 medium yellow onion, diced
1 green bell pepper, diced
1 celery rib, diced
2 Tbsp minced garlic
1 cup tomato sauce
¼ cup water
1 Tbsp tamari
½ tsp liquid smoke
2 tsp apple cider vinegar
3 Tbsp + 1 tsp organic maple syrup
1 Tbsp molasses
Spices:
1 tsp onion powder
1 tsp garlic powder
2 Tbsp dried minced onions
½ tsp sweet paprika
1½ tsp smoked paprika
¼ tsp cumin
2 tsp chili powder
½ tsp mustard powder
1 tsp sea salt
¼ tsp black pepper
Optional Extras:
Buns or wraps, Sweet & Tangy Coleslaw
Instructions
1. Cook lentils in broth until tender.
2. Sauté onion, bell pepper, and celery in a splash of broth until soft.
3. Add garlic and spices; cook until fragrant.
4. Add tomato sauce, tamari, vinegar, maple syrup, molasses, and lentils.
5. Simmer 15 minutes until thickened.
6. Serve on buns or wraps with coleslaw.
Notes
For quicker prep, use canned lentils. Store leftovers in the fridge for up to 5 days.
