Description

Veggie Bake made with cottage cheese, fresh vegetables, and eggs. This high protein vegetarian casserole is easy, filling, and perfect for meal prep.


Ingredients

1 cup cottage cheese

1 cup broccoli florets, chopped

1 cup bell pepper, diced

1 cup zucchini, sliced

1 cup cherry tomatoes, halved

1/2 cup spinach, chopped

1/2 cup red onion, finely chopped

1/4 cup shredded mozzarella cheese

2 eggs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon dried oregano

Cooking spray or olive oil for greasing


Instructions

1. Preheat oven to 375°F and grease a baking dish.

2. In a large bowl whisk cottage cheese, eggs, olive oil, and seasonings.

3. Fold in all chopped vegetables and mozzarella.

4. Pour mixture into prepared baking dish and spread evenly.

5. Bake 35 to 40 minutes until center is set and top is lightly golden.

6. Cool for 10 minutes before slicing and serving.

Notes

Chop vegetables evenly for consistent texture.

Store leftovers in refrigerator up to 4 days.

Freeze slices up to 2 months for meal prep.
