Ingredients

Scale

1 pound ground beef

1 small onion, chopped finely

1 package taco seasoning

½ cup water

1 can black beans, drained and rinsed

1 can diced tomatoes with green chiles

½ cup sour cream

1 bag Fritos corn chips (9.25 oz)

2 cups Mexican-style shredded cheese

Toppings: sliced green onions, sour cream, guacamole, salsa, jalapeños

Instructions

1. Preheat oven to 350°F and spray a 13×9 dish.

2. Brown ground beef; add onions and cook until meat is no longer pink.

3. Stir in taco seasoning and water; bring to a boil.

4. Reduce heat; add beans, tomatoes with chiles, and sour cream; simmer 8–10 min.

5. Layer half the corn chips in dish; sprinkle 1 cup cheese.

6. Add beef mixture; top with remaining cheese.

7. Cover with foil; bake 15 min. Remove foil; bake 5 min more.

Notes

Swap ground turkey for beef if desired.

Prep meat mixture up to 2 days ahead for faster assembly.

For less heat, use plain diced tomatoes.
