Ingredients
Scale
1 large zucchini
1 tablespoon minced garlic
¾ cup breadcrumbs
½ cup grated Parmesan cheese
2 large eggs
Salt
Black pepper
Oil for frying
Instructions
1. Grate zucchini
2. Squeeze moisture
3. Mix ingredients
4. Heat oil
5. Form cakes
6. Cook until golden
7. Flip and cook
8. Drain and serve
Notes
Remove moisture well
Serve immediately for best texture
